Stuffed Peppers

Fresh out of ideas for dinner tonight? Here is one great idea that’s sure to please the entire family. This stuffed pepper recipe is healthy, high in protein and low in fat. Most importantly it’s extremely satisfying and delicious. I promise you won’t miss that heavy side of carbohydrates you’ve become so accustomed to!
Stuffed Peppers - serves 4.
Ingredients
- 4 large Bell Peppers (red and yellow have the best flavor)

- 1 lb turkey mince
- 1 cup brown or white rice
- 1/2 large onion
- 2 cups jarred tomato sauce ( a spicy tomato basil is great)
- 2 cloves garlic, pressed
- 2 tsp Tabasco
- 3 tsp Worcester sauce
- 1 tsp chili powder
- 2 tsp dried mixed herbs
- 1/2 cup feta cheese
- 2 tbsp toasted pine nuts
- 1 tbsp olive oil
- salt and pepper to taste
Preparation
Firstly cook the rice per directions. Preheat oven to 400 degrees. Crumble turkey mince into a large frying pan and cook over a medium heat until all the pink is gone.
While the turkey is cooking, remove the tops of each pepper and scoop out the insides. Do not discard the tops of the peppers. Instead, chop them up to use for the filling. Place all four peppers in a baking dish then chop the onion. Sautee the onion, peppers and garlic in another large pan, with a little olive oil. Add the tomato sauce and all other ingredients, besides the pine nuts and feta, and simmer over a medium heat.
Combine the cooked turkey, rice and pine nuts with the sauce and stir in a little of the feta cheese (reserve some of the feta to sprinkle on top at the end). The mixture should be meaty but not too dry. If it is, you can always add a little extra tomato sauce. Finally, portion the mixture into each of the peppers and place them standing up right in the baking dish. Top each pepper with a sprinkle of feta cheese and bake for 30 minutes. Oh so yummy!
