Fabulous Fish Tacos

The summer months call for lighter fare that’s still big on flavor. Fish is the perfect summer food. Delicate, flaky white fish can be grilled on the BBQ and added to countless summer recipes for the perfect, low-cal, nutritious meal.

Fish tacos are a delicious alternative to traditional tacos that generally use greasy minced beef. I love how the delicate flavor of white fish can be jazzed up with a variety of fresh, healthy ingredients, making tacos a great way to fill up on delicious veggies. The kids will love them too!

There are so many variations on this recipe, so feel free to put your own stamp on it by adding your favorite veggies, salsa and cheese.

Fabulous Fish Tacos (serves 2)

  • 1lb firm white fish fillets (halibut, cod and sea bass are best)
  • 6 small flour tortilla’s
  • 1 avocado sliced
  • 2 spring onions, finely sliced
  • 1 cup of grape tomatoes, halved
  • red cabbage, shredded
  • Romaine lettuce, shredded
  • 1/2 cup fresh cilantro, finely chopped
  • juice of 1/2 lime
  • 1 cup feta cheese
  • 1 can black beans
  • 1 cup pineapple salsa
  • 1 cup light sour cream
  • salt and pepper

Preparation:

Brush fish fillets with olive oil and season with salt and pepper. Grill skin side down at medium heat until fish is white and flaky. When fish is cooked,warm tortillas in tin foil on the grill or in the microwave. Using a spatula, separate fish from skin and flake fish in a bowl. Squeeze the lime juice over the fish. Add a tablespoon of the black beans to the center of a tortilla and top with desired amount of fish, tomatoes, romaine, cabbage, onion, cheese, and pineapple salsa. Top with a couple slices of avocado, a dollop of sour cream and a sprinkle of cilantro. Enjoy!
