Great snack ideas!  A man after my own heart - nutritionally speaking :-)

I do want to mention the fact that smoked salmon does have greatly reduced omega-3 EFAs, so it is not the best way to eat salmon.

For example, three ounces of baked Chinook salmon contain about two grams of omega-3 fatty acids. This same three-ounce portion of Chinook salmon, when smoked, contains less than one-half gram of omega-3s. Smoked salmon contains only about 20% as much EPA as non-smoked salmon on an ounce-for-ounce basis.

What I do is grill extra and have leftovers the next day as a snack on whole grain crackers or a quick lunch (salmon salad). Yummy - and Omega-3s are preserved! :-)
